The more I read about the benefits of following a vegetarian or vegan or even a raw vegan lifestyle the more I am convinced that not only is the diet great for our bodies, but it may also be best for our planet.
The best way to get the most nutrition out of our food is to make sure we aren’t eating “empty calories”. The definition of empty calories means “foods and beverages that have the same energy content of any other calorie but devoid of vitamins, minerals, antioxidants, amino acids, and fiber.
Why would you want to eat food that isn’t going to give to our bodies anything nutritionally? I realized that eating food that in the long run isn’t going to satisfy my nutritional needs means that I’m spending precious calories, and money, and I receive no benefit in return.But th biggest cost it to our health, the earth, farmers, animals and more importantly, to our spirit.
